For desserts I rely heavily on the fruit that is in season, melons, cherries, apricots, peaches, nectarines, strawberries , plums, blueberries all of which are grown locally or in Aude (next Departement). It is possible to pick your own apples and pears as well as blueberries (myrtille in French). You can tell which fruit is in seasd by which small producers come to the market and set up their table with just cherries r or later apricots - those will be the stalls with queues at them! I also am not adverse to buying nut tarts from the local patisserie as well as other chocolate delights. I am not going to try and make tarts when the patisserie does it so much better. This is a nut growing area and the walnuts and hazelnuts are used extensively in local produce.
